Sous Bois is a Brussels-based producer of exceptional artisanal mushrooms, dedicated to gastronomy and bistronomy. Grown in an urban environment using aeroponics—without additives, pesticides, or water waste—these 100% Belgian mushrooms combine quality and sustainability. Already favored by several Michelin-starred chefs, Sous Bois embodies a return to authentic products, with an innovative cultivation system that responsibly optimizes harvests. This project is driven by two friends passionate about gastronomy, aiming to raise awareness of the benefits of mushrooms for the ecosystem.
